BLUEBERRY GALETTE

Not only do I live with some of
the best people, I blog with them
too so I wanted to share with you
a recipe we have been enjoying.

Blueberry Galette

3/4 cup unbleached all purpose flour
1/4 cup stone ground corn meal
1/4 cup sugar
1/4 teaspoon sea salt
6 Tablespoons chilled butter, cubed
3 Tablespoons ice water.

Combine dry ingredients, mix in butter
until mixture feels like heavy sand. Add
ice water, mix well and chill for at least
30 minutes.

In a mixing bowl combine:
3 cups blue berries
3 Tablespoons flour
1 Tablespoon lemon juice
1 1/2 Tablespoons honey

Preheat oven 375 degrees.

Roll dough in a circle and place
on a flat sheet [I use a cast iron
pizza pan].  Pour fruit mixture
in the middle of dough and fold
sides over about 2-3 inches, leaving
the center open.

Sprinkle with 1 Tablespoon Turbinado sugar
and bake 35- 40 minutes, just till crust is a
nice golden brown and the berries are
starting to burst.

Cool slightly then enjoy. I like my slice
topped with a little vanilla yogurt.

  4. Looks easy and yummy. Fruit straight up - not covering up the flavor of the berries with much. On vacation in Maine we always make a cobbler with blueberries and peaches, but perhaps this would be something new to try this year.

  18. Looks beautiful and delicious! I like a sturdy crust and prefer the bite of the cornmeal over just a flour crust. I'm drooling over those blueberries!
