Beer- Cheese Pimiento
8 ounces grated extra sharp cheese
8 ounces red rind cheese or mild American cheese, grated
2 cloves fresh garlic
1 1/2 Tablespoons Worcestershire sauce
1/2 Tablespoons salt
1/2 Tablespoons dry mustard
1/2 cup beer, not lite
several splashes of Tabasco
1 jar diced pimientos
Homemade mayonnaise to taste and to
make a spreadable PC
Makes 1 quart
Blend all the above ingredients well. Chill. This always improves with age.
A good pimiento cheese sandwich has a spread of mayonnaise on both sides.
If you don't want to make mayonnaise, please use a good store bought brand like Dukes.
I didn't say this was in anyway, shape or form a healthy dish, that is why I only make it once a year...but it really is good...drool!

Mmmmm, this sounds a lot like my aunt's recipe (that I still use) except for the addition of beer -- gotta try it! And have you ever had a pimento cheese sammie with strawberry jam and bacon? I discovered this heavenly treat over at Rebekka Seale's lovely blog 'Dear Friend'. It's out of this world good!
