THESE SUMMER DAYS

Some old fashioned things
like sunshine and fresh air
are hard to beat.

I am enjoying these slow summer days,
are you?

There are trips several times a week
to the beaches [ I visit Hunting Island
and Edisto ]. The beach is my happy
place and with heat indexes in the 100's
and humidity that makes me melt I
am in the water as much as possible.

There is time in the gardens, weeding,
putting up all the fruits and vegetables
I can to be enjoyed during the winter
months.

I made my favorite lacto-fermented
salsa that I eat with everything!
{recipe at the end of post}.

There is always knitting, knitting, knitting!
Did you know that as of yesterday
it are only 6 more months till Christmas?

I have been trying for over a year to get
my hands on the book, Slow Stitch
and Amazon finally was able to deliver.
The book is just as wonderful as I knew
it would be.

I finished watching Nurse Jackie and
have now moved on to Orange is the
Black, a show totally opposite of my
world, but maybe that's the hook?

I hope you enjoy the video of the waves,
it is one of my favorite sounds and I
wanted to share the calming sound with
you.

Lacto Fermented Salsa

4-5 pounds tomatoes,
1 head garlic
1 large onion
2 large jalapenos
1 bunch cilantro
2 bell peppers

Chop all ingredients fine,
Add: 

juice of 1 lemon
2 Tablespoons canning salt
1/2 cup whey [I get mine from
staining homemade yogurt]

Mix well and spoon into jars making
sure vegetables are covered with liquid.

I check my jars daily and if the salsa separate
I just give the jars a little shake .

Let sit in a warm place for three days and
then store in ice box.
Do not water bath!

  3. Oh, I miss the ocean. My dames are soaking up sun and having a blast on Oahu with their grandparents. The husband and I checked out a regional park and walked half of a main trail and back for about an hour. Had to burn off at least one of the morning's yummy doughnuts.

  8. beach!!! I want to be at one :) Your summer days are great, I have been having fun enjoying the hot weather (not as hot as yours, obviously) and then getting back into AC. Bliss!! Must you torment me with the holiday count down ??

  11. Perfect summer days!! I started watching OITNB at the suggestion of my friend and I instantly got hooked. It's about so much more than just women in prison. I haven't started the new season yet but will when we get back from vacation. Enjoy!! Happy and safe weekend to you!! xo

  12. If anyone can make me love Summer it would be you. Such beautiful flowers, knitting and ocean. Thank you especially for the video- I had to watch it a couple of times because it was just so peaceful.
    I will need to give that salsa recipe a try as I think I would eat it with everything as well!
