APPLE CAKE
6 Apples
1 Tablespoon Cinnamon
5 Tablespoons Sugar
2 3/4 cups All-Purpose Flour
1 Tablespoon Baking Powder
1 Teaspoon Salt
1 Cup Vegetable Oil
2 Cups Sugar
1/4 Cup Orange Juice
2 1/2 Teaspoons Vanilla
4 Eggs
1 Cup Walnuts
Preheat oven to 350 degrees. Grease and flour a tube pan.
Peel and chop apples into chunks, toss with sugar and cinnamon,
set aside.
Stir together flour, baking powder and salt. In a separate bowl
whisk together oil, juice, sugar and vanilla. Mix into dry ingredients.
Add eggs one at a time, beating well.
Pour half the batter into prepared pan, spread half the apple mixture
over the batter. Pour remaining batter over apples then arrange
remaining apples on top.
Bake 1 1/2 hours or until tester comes out clean.
Yum! That sounds amazing! We are big spice cake fans around here...or is it the cream cheese fronting...hmmm.

ReplyDeletethe last apple recipe i tried out was baked apples stuffed with spices, cranberries, brown sugar, and nuts. it was a big hit :)

ReplyDeleteI love the Shaw quote and the apples look delicious amazing colour. I can't try out the recipe as we have no apples to speak of. I need to go foraging again. I love the idea of the orange juice this must be a lovely moist cake. yummy...
ReplyDeleteYou might like to try one of my mum's apple cake recipes which is also lovely with pears. I'll try to find her apple strudel recipe too...they were delicious...oh and I don't think you can beat good old apple pies. Yummy.

I do have a favorite apple cake recipe.....I'll send it along; I had planned on making it this weekend when we were to host the dessert end of a progressive dinner for the young parents in our church. I guess too much going on for them---I think the party got cancelled......but not the cake!!!
